2. Crispy breaded pork chops

These breaded, bone-in pork chops take just over 30 minutes to prepare. Prepare with seasoned breadcrumbs, salt, and pepper and fry in a pan and then in the oven until crispy. Serve with mashed potatoes and green beans for a perfect meal.
Cooking spray

- 2 large eggs
- 1 tablespoon water
- 1 cup seasoned breadcrumbs
- 4 pork chops (5 oz.), bone-in, cut in half
- 1 ½ teaspoon kosher salt
- 1 teaspoon ground black pepper
- ¼ cup olive oil

Instructions
Step 1
Preheat the oven to 375 degrees F. Lightly coat a rack with cooking spray and place on a rimmed baking sheet.
Step 2
Whisk together the eggs and water during a shallow bowl. Place bread crumbs during a second shallow bowl.
Step 3 (Season the cutlets with salt and pepper)
Season pork chops evenly with salt and pepper. Dip chops in egg, let excess drip off, then toss in breadcrumbs until well coated.
Step 4
Heat half the oil during a large skillet over medium-high heat. Add 2 cutlets to the pan and fry until golden and crisp, about 2 minutes. Turn and fry the opposite side for an additional 1-2 minutes until crispy. Place on prepared rack. Heat the remaining oil within the pan and fry the remaining cutlets.
Step 5 (Cook the pork chops)
Bake the pork chops within the preheated oven until they’re not pink within the center, about 10 to fifteen minutes. A thermometer should read 155 degrees F (68 degrees C).
